01 - 1.1 lb pork loin or cutlets, sliced into 8 thin pieces
02 - Salt and freshly ground black pepper, to taste
03 - 1/2 cup all-purpose flour
04 - 2 large eggs, beaten
05 - 1 cup fine breadcrumbs
06 - 1/4 cup vegetable oil, for frying
→ Cream Soda Sauce
07 - 1 cup cream soda
08 - 2 tablespoons Dijon mustard
09 - 2 tablespoons sour cream
10 - 1 tablespoon apple cider vinegar
11 - 1 tablespoon unsalted butter
12 - 1 tablespoon all-purpose flour
13 - Salt and black pepper, to taste
→ To Assemble
14 - 8 mini brioche slider buns
15 - 4 small dill pickles, sliced
16 - 1/2 small red onion, thinly sliced
17 - 8 small leaves butter lettuce
# Anleitung:
01 - Place each pork piece between sheets of plastic wrap and pound to 1/4 inch thickness. Season both sides with salt and pepper.
02 - Dredge each pork slice in flour, then dip in beaten eggs, and coat evenly with breadcrumbs.
03 - Heat vegetable oil in a large skillet over medium-high heat. Fry the breaded pork cutlets in batches for 2 to 3 minutes per side until crisp and golden. Transfer to paper towels to drain.
04 - In a small saucepan, melt unsalted butter over medium heat. Whisk in all-purpose flour and cook for 1 minute. Slowly pour in cream soda, whisking constantly until lump-free. Simmer until slightly thickened, about 3 to 4 minutes.
05 - Whisk in Dijon mustard, sour cream, and apple cider vinegar. Season to taste with salt and black pepper. Remove from heat and keep warm.
06 - Lightly toast brioche slider buns.
07 - Place a lettuce leaf on the bottom half of each bun, add a schnitzel, spoon cream soda sauce over, layer with pickle slices and red onion. Cover with the top bun and serve warm.
